Then I realized that they both were inspired from these, and these I really loved. So I made my version, minus the giant flower. I think they turned out pretty similar. I’ll be doing a tute in the next few weeks showing how I did it.

This tutorial was pretty clear and the covers were really easy to make. If you are making your own pattern, you may have to make some modifications as I had some issues. Read more and see pics of my version at my other blog.

Buttermilk blueberry breakfast cake

I used blackberries instead of blueberries. The flavor was decent, but not delish. As usual, I didn’t have one of the main ingredients, buttermilk, so I substituted (1T lemon juice plus enough milk to equal one cup). But I don’t think that what made it different. My cake looked more brown than white. It was good. Let me just say that we had leftovers of this cake and none of the banana bread.

Both this and the roasted broccoli were fantastic! So much so that I’ll be buying more fresh veggies to roast rather than going the frozen veggie or salad route. Both recipes were quite easy to make.

The day after I made this broccoli, we went to Bob Evans for lunch . . . one of the meals came with broccoli that paled in comparison. It was laughable.
Cheesy zucchini enchiladas

Another big win with this recipe. I wasn’t sure about the zucchini, but it turned out really well. Next time, I won’t stuff each tortilla with quite so much zucchini, and I’ll likely experiment with different types of chesse.
Gourmet four cheese macaroni

I guess I’ll be ending on a sour note. This recipe had such promise, but freankly, it was no better than some of the other mac’ n cheese recipes I’ve tried. Well, the price tag was MUCH higher due to the gourmet cheeses. I won’t be making this version again.
