Teriyaki-glazed burgers August 4, 2008

I got this yummy and easy recipe from the Real Simple magazine, but I modified it a bit.

Grillers (how ever many you want to eat)
Kosher salt and pepper
1/4 cup teriyaki sauce
Mushrooms, sauteed
Bread
Tomatoes, sliced
Lettuce, torn
1-2 small cucumbers, cut into spears
Heat George Forman Grill. Once hot, cook grillers. (My grill only fits two grillers at a time.)
Grill for 4-5 minutes. Baste with teriyaki sauce and cook for another minute or two.
Brush both sides of bread with a bit of teriyaki sauce and grill for 3-4 minutes.
Make sandwiches with grillers, tomato slices, and lettuce. Serve with the cucumbers.
That’s it . . it takes maybe 20 minutes from start to finish, my kind of recipe!

Yummy baby food August 4, 2008

I always have trouble coming up with ideas for baby food, but tonight I hit the jackpot. I made a great zucchini/tofu concoction. Here’s the recipe!

Olive oil
Tofu, cubed
Zucchini, peeled and cubed
Salt
Garlic Powder
Pepper
Half & half
Tomato Paste
Rice vinegar, pesto flavor
Heat about 1/2 T of oil in a skillet.
Add tofu (I used about 1/4 of the package) and fry until tofu is nice and brown
Add zucchini and continue to fry until tender, maybe 5-8 minutes
Add about 1T tomato paste, 1-2t of vinegar and 1-2t of half and half.  Mix well and cook for 1-2 minutes.
That’s it.  Yummylicious!
